Unibroue, our gentle neighbors to the north in Quebec, Canada, have been churning out exemplary beers for decades, utilizing the same methods that Trappist monks have been practicing for centuries. La Fin du Monde, their flagship tripel ale, is surprisingly mild. this beer will lure you into a false sense of sobriety, as the palate belies the 9% abv hidden in its malty richness. The nose shows nuanced honey, coriander, and fresh baked bread. The palate is surprisingly delicate and crushable, so much so that one could easily be deceived into thinking this is a sessionable wheat ale.
