A guided tasting, history + stories from a pioneer of American craft distilling Join us at Spencer & Lynn for a special evening with Lance Winters, master distiller and creative force behind St. George Spirits. Founded in California in 1982, St. George helped lay the groundwork for the American craft distilling movement. Since joining the distillery in 1996, Lance has helped guide it from its eau-de-vie roots into one of the country’s most original and influential distilleries, building a wide-ranging lineup defined by thoughtful ingredients, serious technique, curiosity and a willingness to follow flavor wherever it leads. Lance will lead us through a guided tasting from across the St. George range, sharing the ideas, ingredients and decisions behind each pour. We’ll explore botanicals, fermentation, distillation, sense of place and experimentation, while hearing how some of the distillery’s defining bottles moved from first idea to finished spirit. This is a rare chance to taste alongside the person who helped shape the trajectory of St. George, ask questions and hear stories from nearly three decades behind the stills. BIG PAN ENERGY-Paella, Late Summer Wines & a Sunday Hang
Come hang with us for a proper late summer Sunday afternoon at Spencer & Lynn. Our dear friend Chef Maria is pulling up with her custom paellero and cooking fresh paella right out back on our very glamorous back porch, aka the parking lot. We’ll have a few late summer favorites open to taste, including bright whites, rosé and lightly chilled reds made for a giant pan of paella, good people and a long Sunday afternoon with nowhere else to be. Totally free to attend. No tickets, no class and nothing formal. Just stop by, grab some paella, sip something delicious and help us squeeze every last little bit out of summer.

Sake Masterclass with Josh Neiderer of Joto Sake
A Guided Exploration of Region, Ritual, and Craft. Sake is often described simply by style or category, but every bottle carries a much deeper story. It is shaped by the rice, the water, the climate, the brewer, the region, and generations of Japanese tradition. This masterclass is an invitation to slow down, taste with intention, and explore sake as both a beverage and a craft. Join us for a guided tasting and masterclass with Josh Neiderer of Joto Sake, focused on the history, geography, and ritual of Japanese sake. Throughout the evening, guests will learn how sake production has evolved over time, how regional brewing traditions continue to influence style, and why sake can express such a wide range of character from one prefecture to another. Together, we will explore how place shapes the pour. From bright, clean, and delicate styles to richer, earthier, more savory expressions, this class will look at the elements that give sake its depth and personality. Guests will gain a better understanding of how rice, water, climate, fermentation, and local culture all contribute to aroma, texture, body, and flavor. Beyond tasting, the evening will also focus on the art of proper sake service. Temperature, vessel choice, pouring technique, and presentation can all change the way sake is experienced. This class will offer practical guidance on how to serve sake with more confidence, care, and intention, whether at the table, for guests, or at home. To make the experience even more special, each ticket includes two custom made sake cups from Ahmee Ceramics, created specially for the evening. These cups are yours to take home, connecting the ritual of sake service with the beauty of handmade ceramic craft. This evening is designed for both sake newcomers and those looking to deepen their appreciation.
