Alcohol: ~11.5%
Fermentation: Native yeasts; gentle whole-bunch press (brief skin contact possible depending on parcel); cool ferment; élevage in concrete/large neutral casks; bottled unfined & unfiltered with minimal SO₂

Tasting Note:
A breezy, low-alcohol Mediterranean white with perfume and snap. White peach, lemon verbena, and fennel mingle with jasmine and a hint of orange blossom. The palate is bright and lightly textural from delicate phenolics, finishing saline and stony with a refreshing, herbal lift. Serve cold; crush with crudo, grilled sardines, herbed salads, or soft cheeses.

About the Producer:
At Matassa, Tom Lubbe chases transparency: old vines, biodynamics, native ferments, neutral vessels, and minimal additions. The Olla whites channel Calce’s altitude and winds into wines that are aromatic yet crisp, light in alcohol, and irresistibly drinkable—pure Mediterranean energy with a chalky, schist-driven spine.
