Tasting Note:
Gérard Boulay’s 2025 “Sibylle” is a beautifully refined Sancerre rosé that captures the elegance and mineral precision of Pinot Noir grown on Chavignol’s limestone-rich hillsides. Wild strawberry, raspberry, red currant, blood orange, rose petal, and delicate citrus blossom lead into a fresh, finely textured palate. Vibrant acidity and a subtle chalky minerality keep the wine focused, while a long, saline finish adds depth and complexity. Delicate yet expressive, with enough structure to make it a versatile companion for seafood, roast poultry, and fresh seasonal dishes.

About the Producer:
Domaine Gérard Boulay is one of Sancerre’s most respected family estates, based in the village of Chavignol, where the Boulay family has cultivated vines since the 14th century. Gérard took over the domaine in 1980 and has become renowned for producing some of the region’s most precise, terroir-driven wines. Working organically with meticulous attention to vineyard health, low yields, and traditional winemaking, Boulay emphasizes the distinctive Kimmeridgian limestone soils that define Chavignol’s greatest vineyards. While best known for his exceptional Sauvignon Blanc, his Pinot Noir wines, including “Sibylle” rosé, showcase the elegance, freshness, and mineral character that make Sancerre one of the Loire Valley’s most compelling appellations.
