Tasting Note:
The 2021 Serraboella – Sorì Paitin is taut, perfumed Barbaresco: rose petal, sour cherry, raspberry, and blood orange layered with licorice, mint, tea leaf, and a graphite/iron edge. Medium-plus in body, it’s driven by fine, persistent Nebbiolo tannins and lively acidity, finishing long, stony, and precise. Decant 60–90 minutes if opening now; cellar comfortably 10–15 years. Pair with truffle pasta, braised short ribs, roasted game birds, or aged toma/pecorino.

About the Producer:
Paitin is one of Barbaresco’s historic addresses, run by the Pasquero-Elia family for generations. Their heart is Serraboella in Neive, where old vines and meticulous organic farming yield Nebbiolo of clarity and nerve. Vinification is deliberately traditional—native fermentations, long macerations, and élevage in large botti—so site speaks first. Sorì Paitin is the estate’s flagship parcel and a benchmark for structured, age-worthy Barbaresco.
