About the Producer:
Caballito Cerrero was founded in 1950 by Don Alfonso Jiménez Rosales (co-founder of Herradura) and remains one of Mexico’s most independent and traditional agave spirit producers. Operating outside the official Tequila appellation, they label their spirits as Destilado de Agave to preserve autonomy and resist industrial practices. The Jiménez family harvests fully mature agaves, slow-cooks them in brick ovens, mills with a roller mill, ferments naturally, and double-distills in copper pot stills. The Azul Blanco 46 is bottled without additives or dilution beyond its robust 46% ABV, offering an unadulterated taste of Amatitán terroir.
