Appellation: Champagne AOC
Country: France
Region: Champagne – Vallée de la Marne & Montagne de Reims parcels
Producer: Francis Boulard & Fille
Winemaker: Francis & Delphine Boulard
Vineyard: Old-vine, low-yield plots; predominantly sand/clay over chalk
Soil: Clay-sand, limestone, chalk
Farming: Certified organic/biodynamic; hand-harvested
Alcohol: 12.0%
Fermentation: Native yeasts; ferment/élevage in neutral barrels & tank; minimal dosage (Extra Brut, typically 2–4 g/L); extended lees aging; minimal sulfur

Tasting Note:
Meunier-led depth with razor clarity. Ripe orchard fruit (pear, apple) and citrus peel over toasted almond, brioche, and wet chalk. The bead is fine and persistent; the finish is saline, dry, and mouthwatering. A gorgeous aperitif that also sings with oysters, fried chicken, and triple-crèmes.

About the Producer:
A pioneer of organic/biodynamic farming in Champagne, Francis Boulard & Fille works a mosaic of old vines and ferments with native yeasts, often in neutral wood. The goal: texture without heaviness and chalk-driven precision. Les Murgiers (named for stone walls) is their signature Meunier-forward cuvée—taut, savory, and quietly complex.
