Tasting Note:
The 2021 Les Hautes Chèvres combines red cherry and plum with dried flowers, hazelnut, and a subtle incense-like spice. The palate is layered and vinous without feeling heavy, with fine acidity giving the fruit definition and keeping the dry finish lively. There is depth here, but the wine favors perfume and finesse over sheer power. A Champagne for the dinner table, particularly alongside seared scallops, roast chicken, or a buttery mushroom tart.
About the Producer:
Georges Laval is a small family grower estate in Cumières, where organic farming has been central since 1971. Vincent Laval has led the cellar since 1996, continuing his father’s commitment to healthy vineyards and individually expressive wines. Ripe fruit, native-yeast barrel fermentation, limited sulfur, and bottling without fining or filtration define the approach. Les Hautes Chèvres focuses on one hillside site, with the unusual three-grape 2021 blend reflecting that particular harvest rather than a fixed varietal formula.
