Tasting Notes:
Cinco Sentidos Espadín Capón is a rich, concentrated mezcal made from Agave angustifolia that has been left in the ground for several months after the quiote (flower stalk) is cut, allowing the sugars to intensify before harvest. This “capón” method yields a fuller, sweeter spirit with remarkable depth. The nose bursts with baked agave, honey, and ripe tropical fruit, accented by warm spice and light smoke. The palate is lush and complex, offering flavors of caramelized pineapple, orange oil, roasted nuts, and earthy minerality. The finish is long, layered, and elegant, carrying sweet agave tones and delicate herbal spice.
About the Producer:
Cinco Sentidos (“Five Senses”) is a project born from the restaurant El Destilado in Oaxaca City, created to highlight small-batch, traditionally made mezcals from independent mezcaleros. Every batch is a transparent, single-origin expression, made without additives and using heritage methods. For the Espadín Capón, mature agaves are cooked in earthen pits, milled by tahona or wooden mallet, naturally fermented in open-air wooden vats, and double-distilled in clay or copper stills depending on the mezcalero. The capón process brings exceptional concentration and complexity, making this a standout Espadín bottling.
