Tasting Note:
Alice and Olivier De Moor’s 2023 “Vau de Vey” is a beautifully precise Premier Cru Chablis that combines remarkable mineral intensity with depth and texture. Lemon zest, green apple, white peach, quince, chamomile, and subtle wild herbs lead into a concentrated, energetic palate. Vibrant acidity and a striking chalky, saline character provide tension and structure, while extended lees aging adds gentle richness without sacrificing freshness. The finish is long, stony, and beautifully focused, making this a serious, age-worthy expression of Chablis.
About the Producer:
Alice and Olivier De Moor are among the most respected growers in Chablis, known for their uncompromising approach to organic farming and minimal-intervention winemaking. After establishing their domaine in Courgis in 1989, they began farming organically in 2005, focusing on low yields, hand harvesting, indigenous fermentations, and patient élevage. Their wines are celebrated for their purity, texture, and unmistakable expression of Chablis’ limestone-rich terroir. “Vau de Vey” is one of the domaine’s most compelling Premier Cru bottlings, showcasing the mineral precision and depth that have made the De Moors benchmarks of modern Chablis.
