Tasting Note:
Domaine Gavoty’s 2025 “Grand Classique” is exactly what great Provence rosé should be: refreshing, elegant, textured, and quietly serious. This is not just pale pink porch wine. It has real shape and presence, with strawberry, white peach, raspberry, citrus peel, melon, wild herbs, and a subtle saline edge. The palate is clean and bright, but there is a lovely mouthwatering texture underneath the freshness, giving the wine more depth than the average Provence rosé. Cinsault brings lift, perfume, and red-fruited charm, while Grenache adds roundness and a little extra generosity. It is easy enough for the beach or patio, but has enough structure for the table. Perfect with niçoise salad, grilled shrimp, roast chicken, tomato dishes, goat cheese, aioli, herby vegetables, or anything Mediterranean and sun-soaked.
About the Producer:
Domaine Gavoty is a historic family estate in Cabasse, in the Var, with the Gavoty family working the land since 1806. Today, the domaine is led by Roselyn Gavoty, the eighth generation of the family, and the estate farms 50 hectares of vines within a larger polycultural property surrounded by oak and pine forests. Gavoty has long been respected in France for rosé with texture, balance, and real wine-like character rather than simple refreshment. The cellar is traditional and practical, built around cement, stainless steel, and fiberglass rather than heavy-handed technique. “Grand Classique” is the estate’s benchmark Côtes de Provence rosé: organic, elegant, saline, and quietly one of the most dependable serious rosés in the category.
