Tasting Note:
Electric, feather-light Palomino that trades weight for snap and salinity. Lemon peel, green apple, and pear skin lead, followed by chamomile, raw almond, and sea spray over a laser-clean chalk core. The palate is ultra-dry and racy yet not austere, with a gentle, talc-like texture from brief lees time and a mouthwatering, saline finish. Serve well-chilled as an aperitif or with fried fish, oysters, boquerones, or a simple tomato-and-olive salad.

About the Producer:
Equipo Navazos hunts down exceptional Andalusian parcels and cellar lots, bottling them with minimal adornment to spotlight place. While known for sherry, their OVNI line captures unfortified Palomino grown on albariza—native ferments, stainless steel, and minimal SO₂ to preserve chalk and Atlantic lift. The goal is clarity and refreshment: bright fruit, salty edges, and a crystalline sense of Cádiz.
