Brilliant pale gold with fine, persistent bubbles. The nose opens with layers of orchard fruit—ripe apple, pear—and white flowers, overlaid with crushed chalk, hazelnut, and subtle brioche. On the palate, taut and racy with crystalline citrus, saline minerality, and a mouth-coating texture that balances purity with depth. The finish is long and vibrating with energy—bone-dry, mineral, and refreshingly precise.
Oysters on the half shell, Tuna crudo with citrus, Sushi or sashimi, Roasted chicken with herbs, Comté or aged goat cheese, Caviar and blinis
Georges Laval, now led by Vincent Laval, is among the most revered grower-producers in Champagne. The Laval family has farmed organically since 1971—long before it became fashionable—on steep, chalk-rich vineyards in Cumières. Vincent’s style is uncompromising: native fermentations, no chaptalization, long élevage in neutral oak, no dosage, and very low sulfite use. His Cumières 1er Cru Brut Nature is a reference-point grower Champagne—tense, layered, and intensely terroir-driven.
