About this bottle

Wine Type: White
Vintage: 2023
Bottle Size: 750ml
Grape Variety: 100% Chardonnay
Appellation: Bourgogne Chitry AOC
Country: France
Region: Burgundy (Chablisien / Grand Auxerrois)
Producer: Domaine Olivier Morin
Winemaker: Olivier Morin
Vineyard: Estate parcels in and around Chitry-le-Fort; “Constance” is typically from younger vine parcels and released for early drinking
Soil: Mostly Kimmeridgian limestone (that seashell, Chablis-adjacent geology) with clay limestone influence
Farming: Organic practices and sustainably farmed (plowed, grass-covered rows; not always presented as certified)
Alcohol: 13.5%
Fermentation: Hand-harvested fruit, gently pressed; native yeast fermentation; élevage in tank or vat on fine lees (house style favors freshness and detail)

Tasting Note:
Constance is the kind of northern Burgundy Chardonnay that scratches the “Chablis” itch without turning sharp or stern. It opens with white flowers, lemon peel, and green apple, then shifts into crushed shell, chalky mineral, and a clean saline snap. There’s a subtle leesy roundness underneath, but the line stays crisp and chiseled. The finish is mouthwatering and quietly persistent, basically begging for another sip and something briny on the table.

About the Producer:
Olivier Morin farms a small family estate in Chitry-le-Fort, just a short hop from Chablis, and makes precise, mineral-driven wines that routinely overdeliver for the appellation. “Constance” is the fresher, earlier-released white cuvée: native yeasts, tank aging on lees, and a focus on clarity over flash.
