Tasting Note:
Jabalí is one of mezcal’s most distinctive and challenging agaves, and Rey Campero’s version is both intense and beautifully controlled. Aromas of fresh herbs, green pepper, citrus oil, and wet stone jump from the glass. The palate is sharp and electric—lime zest, pine resin, white pepper, and bitter greens—carried by high acidity and a piercing mineral spine. There’s very little overt smoke here; instead, it’s all tension, bitterness, and savory complexity. The finish is long, dry, and mouthwatering, with a bracing, almost alpine freshness.

About the Producer:
Rey Campero is a family-run mezcal project rooted in the Cortés family’s generational knowledge of agave cultivation and mezcal production. Based in the Sierra Sur of Oaxaca, they are known for their commitment to sustainability—replanting agaves, cultivating wild varieties, and working with minimal intervention to let each agave speak clearly. Jabalí is notoriously difficult to ferment and distill, and Rey Campero’s success with it speaks to their patience, technical skill, and deep understanding of mezcal tradition. This is mezcal for the curious and the committed.
