The 2024 Gres is vibrant, textural, and quietly complex. Aromas of lemon peel, green apple, and white flowers mingle with subtle herbal notes and a stony, Mediterranean minerality. On the palate, it’s fresh and precise, with citrus and orchard fruit framed by gentle grip from clay aging. Saline lift and bright acidity carry through a clean, mineral finish. An effortlessly drinkable yet thoughtful white that captures Mallorca’s sun, breeze, and limestone soils.

About the Producer:
Anima Mundi is a small, biodynamic project in Mallorca led by Sergi Caballero, dedicated to expressing the island’s native varieties through minimal-intervention winemaking. Working closely with organic growers and farming his own parcels, Caballero focuses on living soils, low yields, and gentle cellar work. Clay amphorae and neutral vessels are central to the approach, emphasizing texture and purity over oak influence. The wines are Mediterranean in spirit—fresh, saline, and rooted in place—offering a modern yet deeply respectful take on Mallorca’s viticultural heritage.
