Tasting Note:
Censo’s “Praruar” is a beautifully expressive skin-contact Catarratto that captures the rugged, mineral character of Sicily’s high-elevation vineyards. Ripe pear, yellow apple, dried apricot, orange peel, chamomile, wild herbs, and subtle almond notes lead into a textured, savory palate. Gentle tannins and vibrant acidity balance the wine’s richness, while a distinctive saline mineral edge carries through a long, pleasantly bitter citrus finish. Complex and energetic, with enough structure to shine alongside food.
About the Producer:
Censo is the small, organically farmed estate of Gaetano Gargano, located near Palazzo Adriano in the mountains of western Sicily. Working with old-vine Catarratto at elevations approaching 700 meters, Gargano focuses on preserving the region’s traditional agricultural practices through organic farming, indigenous fermentations, and minimal intervention. His wines are deeply connected to the limestone-rich soils and cooler mountain climate, offering a distinctive expression of Sicily that emphasizes freshness, texture, and mineral complexity rather than ripeness and power. “Praruar” showcases Catarratto’s remarkable potential for skin-contact winemaking, producing a wine of savory depth and unmistakable Sicilian character.
