Tasting Note:
A finely etched expression of Sauvignon Blanc that balances fruit and stone. Lime zest, white peach, and gooseberry are layered with crushed flint, grapefruit pith, and a gentle saline finish. Lively and precise, with a touch more texture than its Sancerre cousin—lees work adds subtle creaminess while keeping the frame taut and mineral. Serve with oysters, sushi, goat cheese, or lemon-roasted chicken.
About the Producer:
Thomas and Marie Denizot, known for their crystalline Sancerres, apply the same detail-oriented approach to Pouilly-Fumé. Farming is sustainable and increasingly organic, emphasizing soil health and careful picking for acidity and balance. In the cellar, ferments are slow and cool with minimal intervention to preserve purity. The resulting wines show the Denizot signature—vivid fruit, flinty minerality, and a calm, elegant structure that reflects both family heritage and thoughtful modern precision.
