Tasting Note:
Cascina degli Ulivi’s 2025 “Semplicemente Bellotti” Bianco is a vibrant, expressive Cortese that captures the freshness and mineral character of southeastern Piedmont. Green apple, lemon zest, ripe pear, white flowers, chamomile, and subtle herbal notes lead into a lively, lightly textured palate. Bright acidity and a gentle saline edge keep the wine refreshing, while a savory mineral finish adds complexity. An approachable, naturally made white with plenty of personality and versatility at the table.

About the Producer:
Cascina degli Ulivi is one of Italy’s pioneering biodynamic estates, located in Novi Ligure in southeastern Piedmont. Founded and developed by the late Stefano Bellotti, a visionary farmer who embraced organic and biodynamic agriculture decades before it became widely practiced, the estate has long been a benchmark for natural wine in Italy. Today, his daughter Ilaria Bellotti continues the family’s holistic approach, integrating vineyards, livestock, grains, and other crops into a self-sustaining agricultural ecosystem. “Semplicemente Bellotti” represents the estate’s more approachable side, offering fresh, expressive wines that remain deeply connected to the family’s farming philosophy.
