Tasting Note:
Thomas Pico’s 2022 “Vent d’Ange” Mise Tardive is Chablis with extra depth, patience, and quiet force. The “mise tardive” designation refers to extended aging before bottling, giving the wine more texture and dimension without losing the cut and mineral drive that make Chablis so compelling. Expect lemon oil, green apple, pear skin, chalk, oyster shell, white flowers, and a subtle leesy richness that rounds the edges just enough. The palate is bright and saline, but not austere, with a beautiful tension between citrusy precision and a deeper, more enveloping texture. It is classic Chablis in its bones, but with the kind of layered, slow-building complexity that makes Thomas Pico’s wines feel so singular. Excellent with oysters, roast fish, scallops, chicken in cream sauce, or a very good wedge of aged Comté.
About the Producer:
Domaine Pattes Loup is the project of Thomas Pico, one of the most important voices in the newer generation of Chablis growers. Based in Courgis, Pico farms organically and takes a slower, more patient approach in the cellar than many of his neighbors, favoring long élevage, native fermentations, and minimal intervention over speed or polish. His wines are deeply Chablisien, full of chalk, salt, and citrus, but they also carry a generosity and textural depth that sets them apart. “Vent d’Ange” is his flagship Chablis bottling, and in the Mise Tardive version, the extended aging brings even more breadth, complexity, and quiet intensity to the wine.
